Title: Pasta with Olive Oil, Olives, Garlic, & Anchovies

Yield: 2 Servings

1/4cOlive oil
4lgGarlic cloves, minced
2ozCan anchovy filets drained and chopped
4ozCan sliced black olives, drained well
8ozSpaghetti, cooked according to package directions
2tsLemon juice
  Fresh cracked pepper, to taste
1tbChopped parsley
2tbParmesan cheese

Heat oil in a small skillet. Add garlic and saute 2 min. Add anchovies and cook until garlic browns a little, about 3 minutes. Cook and drain spaghetti and place in a large bowl. Add garlic/oil/anchovy mixture, lemon juice and black olives. Toss to coat well. Divide between plates and sprinkle with parsley and cheese.
